Chicken Zucchini Boat

1 Large Zucchini or a Few Small Zucchini’s

1 Pound Chicken Breast

3 Tablespoons Olive Oil

1 Small Head Broccoli


Mozzarella Cheese Shredded

Parmesan Cheese Shredded

Bread Crumbs (I used plain)

Add 3 tablespoons of EVOO to a frying pan.

Cut chicken into bite size pieces and add it to the pan

Brown the chicken until almost done. Be sure to not cook fully.

Heavily drizzle honey over chicken. Toss and carmelize.

Put chicken in bowl and cover with bread crumbs. The honey works well for keeping the bread crumbs on the chicken. It will eliminate the use of eggs.

Steam the broccoli and cut into peices.

Cut zucchini in half.

Core out the seeds. You can use what ever makes you happy. But I bought a few Mellon¬†scoops at a yard sale last year. The lady I bought them off of said she never used them. They were so worth the 10 cents a piece. It makes everything effortless. Anywho…..

Lay out the zucchini on a cookie tray. Preferably one with depth.

Place the mozzarella cheese into the boat (as much as you want).

Then layer pieces of broccoli onto cheese.

Next top with the chicken.

Last sprinkle parmesan cheese.




Bake in oven at 350 Degrees for approx 30 mins.

* I noticed I had to bake mine a little longer because the zucchini was large.

We absolutely¬†fell in LOVE with this recipe. I will admit that we couldn’t finish it. It was very filling.
